Carolina's Mexican Food has a long-established credit for making some of the most exceptional Mexican cuisines in the Southwest. It starts as a dream of Manuel and Carolina Valenzuela in the 1950s. In the early years, the pair focused mostly on making handmade tortillas, burritos, and tamales, that was traded them out of the back seat of the family car at wrestling sports and to migrant workers in the areas, and always making sure the food was fresh and made in the traditional method taught to them by their parents. Carolina's son Edward became a permanent and essential component of the industry; he took the position of pot and pans, helping Dad to head cashier, again no contract was required, just a firm handshake. The managers and owners are David and Victoria Tiedens, and the fourth period of the family is currently in their practice. Their team provides a type of pick up, drop off, or set up choices to fit any event.

In October of 1982, they began the original On The Border at the corner of Knox and Travis in Dallas, Texas. The business booming with their three colleagues decided it was time to share On The Border with more people.
