The bakery was founded by Janis Fleischman and Jerry Lewanski. Jerry spent a year training at the San Francisco Baking Institute, where he developed a passion for baking. The bakers at the bakery have been trained in some of the best culinary programs in America. They continue to train talented Alaskans in the craft of artisan baking through on-site training and distance learning. All of their flour is organic and specially chosen and milled for artisan baking. Fire Island Rustic Bakeshop proudly produces organic, fairly traded coffee and tea. Their bakery items include crunchy, traditional breads, sweet and savory croissants and scones, hearty muffins, fresh cookies, frozen cakes, tarts, multi-grain granola, a variety of daily sandwiches, and holiday specials. Fire Island Rustic Bakeshop has two branches within Anchorage.
