Mariposa Baking Co is a gluten-free sweet and savory bakery, from pastries to croutons, with a regular coffee menu. This certified green bakery also features the first retail bakery. In the fall of 2004, Patti Furey Crane launched Mariposa Baking with a small team of artisan bakers. They checked instinctively against the finest wheat-based products and produced baked goods that they were proud to mark. Their bakers produce 100% gluten-free baked goods made from fresh, organic and natural ingredients. Takeout and gluten-free options are available. Arizmendi Bakery is the shortened name of Jose Maria Arizmendiarrieta, a young priest who inspired and helped found the Mondragon Cooperatives in the Basque Country of Spain in the 1950s. The bakery is started as one firm and roughly 25 people in 1956 is now a major international business with a work force of over 100,000, employed in some 250+ worker-owned enterprises and affiliated organizations. At Arizmendi Bakery on Lakeshore, they offer their community artisan bread, morning pastries, and gourmet pizza. Their focus is on providing healthy food using straightforward recipes and quality ingredients. For lunch or dinner, they offer a unique vegetarian pizza of the day featuring seasonal vegetables, infused oils, and fresh herbs on organic, thin sourdough crust.
